This Turkey Apple Puff is comfort food with a twist. It was created by Lisa, a teacher and mom, who says the recipe quickly became a popular lunch with her husband and kids. I can see why!  It is easy to make and flavorful with the honey mustard and apples. Those ingredients add tangy and sweet dimensions, making it a delight to eat. I love that Lisa’s daughter helps in the kitchen and even helps with the assembly of this dish. A recipe that is tasty and gets kids involved is a winner in my book!

Here’s a “how-to” if you want to experience this Minnesota State Fair blue ribbon winner for yourself:  First, preheat oven to 350 degrees. Caramelize onions in butter and oil at medium heat until they turn a rich, dark brown. A bonus to this recipe is that your house will smell wonderful after the onions are caramelized. A tip if you need to save time- the onions can be made ahead of time and stored in the refrigerator in an airtight container.

The crust of this dish is light and fluffy, but substantial enough to hold all the toppings. To make it, bring butter and water just to a boil in a medium-sized saucepan. Remove from heat and quickly stir in Bisquick to smooth the batter. Add eggs, one at a time, until fully incorporated into the dough. Spread the dough into a long rectangle on a parchment lined or greased cookie sheet. The dough will be like a thick pancake batter and easy to spread.

Bake for 15 minutes. While baking, cut apple into thin slices. It might seem like a lot of slices, but don’t worry, you’ll use them all. (And it’s always nice to have a few extra for children who like to sneak ingredients while you cook!)

Remove puff from oven and immediately top with honey mustard, caramelized onions, turkey, apple slices, and Swiss cheese.

Return to oven and broil for 3-5 minutes until cheese is melted. Garnish with green onions.

Turkey Apple Puff

Puff:

1 cup Original Bisquick mix

4 tablespoons butter

1/2 cup water

3 large eggs

 

Toppings:

1 small onion, thinly sliced

1 tablespoon butter

3 tablespoons honey mustard

1/2 lb smoked turkey deli meat

1/4 lb sliced Swiss cheese

1 large Granny Smith apple, cored and sliced thinly

1 green onion, chopped (use only the green)

 

Preheat oven to 350 degrees. Caramelize onions in 1 tablespoon butter and oil at medium heat in a saute pan on the stove until they turn a rich dark brown color. (These can be made ahead and stored in an airtight container and refrigerated.)

In a saucepan, quickly bring 4 Tablespoons butter and water just to a boil. Remove from heat. Add Bisquick. Mix all at once and stir quickly to remove lumps. Stir in eggs, one at a time until all are incorporated into a dough. Spread dough into a long rectangle on a parchment lined baking sheet. Bake for 15 minutes.

Remove puff from oven and immediately top with honey mustard, caramelized onions, turkey, apple slices, and Swiss cheese. Return to the oven and broil for 3-5 minutes, until cheese is melted. Garnish with green onions. Can be served immediately, but is also quite good at room temperature or even the next day after being refrigerated.
