Coconut Dreams
Minnesota State Fair Winner
Coconut and chocolate? Yes, that combination is a dream come true! So are these cookies!These Coconut Dreams have just the right balance of coconut and chocolate, and they are soooo soft.
They hail from the Minnesota State Fair where they were a top finalist in the 2013 Gold Medal Flour cookie contest. (Kudos went to Diane Sillerud). They bake up so tender (I’m serious, like melt in your mouth) and with the chocolate drizzle on top, they will wow you.
Once I tasted these Coconut Dreams, I was so excited to share the cookies at work. Within minutes of setting them out, numerous c0-workers sent gushing “thank you” e-mails telling me how delicious they were! I hope you get to try them yourself!

Coconut Dreams
3/4 cup unsalted butter
1 cup sugar
3 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
2 1/4 cups Gold Medal flour
1 1/2 teaspoons baking powder
1/4 cup cornstarch
1/4 teaspoon salt
1 1/2 cups angel flake coconut
1 1/2 cups dark chocolate chips
Frosting:
3/4 cup cream
1 cup chocolate chips
Preheat oven to 350 degrees Fahrenheit. Prep cookie sheet with parchment paper. In medium bowl, combine butter and sugar until creamy. Add eggs, vanilla, and almond extract. Mix and set aside. Place flour in a large bowl. Add baking powder, cornstarch, and salt. Mix well. Add wet ingredients and combine. Add coconut and chocolate chips, and mix.
Drop dough by rounded teaspoons onto baking sheet. Bake for 10-12 minutes. Transfer from hot baking sheet to cool surface.
For frosting: heat cream in microwave until melted, 30 seconds at a time. Stir in cream a little at a time. Using a teaspoon, drizzle frosting over cookies. Makes about 3 dozen cookies.
