Hot Chocolate Cayenne Cookies

These cookies will help you stay warm all winter long. The cayenne gives them heat and the coconut oil/honey combo a moist texture I find completely addicting. And like most cookies, they freeze well so you can make a double batch and keep them in your freezer for whenever the craving hits.

Hot Chocolate Cayenne Cookies
1 cup coconut oil
1 cup honey
2 eggs
1 tablespoon vanilla extract
3/4 cup unsweetened cocoa powder
2 1/4 cup all-purpose flour
3/4 teaspoon baking soda
1 teaspoon cayenne pepper, or to taste
1 tablespoon cinnamon
1/2 teaspoon salt
Preheat oven to 325°F. In large bowl, mix coconut oil, honey, eggs, and vanilla until combined. Separately, whisk dry ingredients (cocoa powder, flour, baking soda, cayenne pepper, cinnamon, and salt). Mix the dry ingredients into the coconut oil mixture until combined and dough forms. Chill 1 hour or longer. Scoop cookie dough by teaspoonful and shape into 1-inch balls. Bake 8 to 10 minutes or just until set. Cool on wire rack. Makes about 60 cookies.
