Peanut Dipping Sauce

This Peanut Dipping Sauce goes perfect with my Chicken Satay. It has coconut milk, peanut butter, honey, soy sauce, red curry paste, chili oil, and dried chili flakes.If you have leftovers or simply love the flavor and want to use it in other things, go for it! It goes great with rice noodles, spring rolls, or as one of my friends said, “pair it with a spoon!”
You can also add some water and white wine vinegar and you would have a terrific dressing for a chicken protein bowl or a Thai style cabbage salad, or any salad for that matter. Enjoy!

Spicy Peanut Dipping Sauce
1/2 cup coconut milk
1/4 cup peanut butter
1 tablespoon honey
1 tablespoons soy sauce
2 teaspoons red curry paste
2 teaspoons chili oil
1 teaspoon dried chili flakes
Mix ingredients and serve with chicken satay. Refrigerate any leftovers. Freezes well also.
