Hawaiian Delight Cookie Cups

Hawaiian Delight Cookie Cups recipe 1

You will be completely delighted with these easy and delicious cookie cups. There have just three ingredients in the cookie dough (flour, sugar and butter). We baked a trial run and loved the “just slightly sweet” cookie contrasted with the rich, creamy and sweet filling. You make the cups a bit thick, so they’re strong enough to hold the filling. Cream cheese, whipped topping, and coconut extract make up the filling. Toasted coconut tops off the cookie and makes it a show stopper!

Hawaiian Delights

 

Dough:

2 cups Gold Medal® all-purpose flour

2 tablespoons sugar

1/2 pound butter

 

Filling:

1 cup powdered sugar

1 (8 ounce) package cream cheese

1 teaspoon coconut extract

1 (8 ounce) container whipped topping

 

Garnish:

Crushed coconut

Crushed walnuts

Shredded coconut

For Dough: Mix ingredients for dough. Shape into walnut size shapes. Pat into a mini muffin tin pan. Make bottom of cups thick for strength. Bake at 350 degrees F for 20 minutes. Take cups out of pan to cool.

For Filling: Cream sugar and cream cheese together lightly with mixer. Add coconut extract, fold in whipped topping by hand and mix. Spoon or pipe onto cooled baked cups. Garnish with crushed coconut, crushed walnuts and shredded coconut.
