Next time a flavor craving for “buffalo chicken wings” hits you, make these Savory Buffalo Chicken Mini Pies.

They are basically baby-sized savory pies packed with diced chicken, cheddar cheese, and spicy red hot sauce. A bleu cheese crumble topping and celery garnish bring home the buffalo chicken theme. You can tailor them to your preferred heat level with how much sauce you use.

Savory Buffalo Chicken Mini Pies

2 cups chopped, cooked chicken (about 2 breasts)

1/2 cup buffalo chicken or red hot sauce

1 teaspoon pepper

1 1/4 cups shredded cheddar cheese

1/2 cup Original Bisquick mix

1/2 cup milk

2 eggs

Preheat oven to 375 degrees F. Spray muffin tin (12 count) with cooking spray. In medium bowl, mix the chicken, buffalo sauce, and pepper together. Add the cheese, mix and set aside. In a separate medium bowl, combine Bisquick, milk and eggs. Spoon a tablespoon of batter into each muffin cup. Add 1/4 cup chicken mixture to each cup. Add another tablespoon of batter to each cup. Bake for 25-30  minutes or until toothpick comes out clean. Garnish with blue cheese crumbles and celery slices.
