Easy Apple Bread Pudding with Toasted Pecans

So I’ve been meaning to share a bread pudding recipe for quite some time. A recipe doesn’t get much easier than this one; or tastier. You just combine everything in a slow cooker. And less than 3 hours later (with no additional effort)…Easy Apple Bread Pudding 2a…you have a delicious dessert on your hands. It’s a great way to use leftover bread and satisfy your sweet tooth.

 

Easy Apple Bread Pudding w/ Toasted Pecans

8 cups bread, cubed

1 cup chunky applesauce

1/4 cup maple syrup

2 cups skim milk

4 eggs, beaten

1/2 cup (8 tablespoons) butter, melted

1 teaspoon vanilla

1 teaspoon cinnamon

1/3 cup brown sugar

1⁄4 teaspoon nutmeg

1/2 cup toasted pecans halves

Place bread cubes in slow cooker. Spoon apple sauce on top. Drizzle with maple syrup. In bowl, whisk milk, eggs, melted butter, vanilla, cinnamon, sugar, and nutmeg. Pour over bread layer. Sprinkle with chopped pecans. Top with pecans. Cover and cook on medium heat for 2 hours. Reduce to low heat and cook 30 more minutes or until set. Serve solo or with ice cream.
