Monster Cookies
From a Minnesota State Fair Supreme Baker
Monster Cookies
1 cup granulated sugar
1 1/4 cup light brown sugar
1/2 cup butter, softened
1 1/4 cup + 1 tablespoon creamy peanut butter (or a 12 oz. jar)
3 eggs
1/2 teaspoon salt
1 teaspoon vanilla extract
2 teaspoon baking soda
4 1/2 cups whole oats
1/2 cup golden raisins*
1 1 /2 cups M&M candies*
Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper. In a large mixing bowl, combine the granulated sugar, brown sugar, butter, and peanut butter. Beat about 3 minutes on medium speed to cream. Add the eggs, salt, vanilla extract and baking soda and mix to combine. Add the oats. Stir in raisins and M&M’s. Drop by a 1 1/2-inch scoop on cookie sheets. Flatten slightly. Bake for 8 – 10 minutes until edges are set and cookies are a light golden brown. Cool. Makes about 6 dozen cookies.
